Memphis Dust Recipe

Yield. Makes about 3 cups.
Preparation time. 10 minutes roughly

3/4 cup firmly packed dark brown sugar
3/4 cup white sugar
1/2 cup paprika
1/4 cup kosher salt
1/4 cup garlic powder
2 tablespoons ground black pepper
2 tablespoons ground ginger powder
2 tablespoons onion powder
2 teaspoons rosemary powder


This is my favorite dry rub to use on BBQ.  I use this on everything from ribs, to pulled pork, to chicken.  On a 4lb slab of baby back ribs I typically use 1-2 tablespoons per side.  In most things you use it on, you want to let it sit on the meat at least an hour before cooking.  On ribs I like to put it on them the night before.
