So I decided to attempt to make my own Pesto sauce. I’ve always liked Pesto sauce, but I’ve had trouble finding ones as good as what I’ve had in Italy. So I decided to take a crack at it myself. I made this with some Italian sausage and spaghetti.
This is the recipe I followed
- 3 cups packed fresh basil leaves
- 4 cloves garlic
- 3/4 cup grated Parmesan cheese
- 1/2 cup olive oil
- 1/4 cup walnuts
- Salt & Pepper to taste (I used a fair bit of salt).
- A couple Italian sausage browned, and cut up.
I know the walnuts sounds odd, as traditionally pine nuts are used. However I didn’t have pine nuts, and my food manager (Wife) informs me they’re pretty expensive. So while watching Diners, Drive-ins, and Dives some chef mentioned he uses walnuts. Thus the attempt with walnuts.
Instructions:
1. Dump ingredients in Food Processor.
2. Turn Food Proccessor on.
I meant to take some photos of the whole ingredients, but alas I forgot. So this it what it looks like after its been mixed in the food processor.
And this my friends is what dinner looks like. The sausage has been added in, and I shredded some extra Parmesan cheese on top for good measure.
So in the end it was pretty fantastic. I was very happy with the way it turned out, and since it doesn’t have to be cooked, the sauce takes approximately 5 minutes to make. So it aside from maybe cooking the sausage, the Pesto makes for a pretty ideal dinner in when either starving or in a time crunch.
Now that I have the basic Pesto down, I think next time I’ll try some alternates such as Spicy pesto, or rosemary pesto.
