Peanut butter Chocolate Chip Cookies

So on occasion I decide to take my sweet tooth in my own hands and get into some baking.  I decided this time to attempt to combine my love of things peanut butter and chocolate into a cookie.    The results are mostly excellent…with one or two things I’d do differently next time.

So first things first.  The recipe.

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 tablespoons light corn syrup
  • 2 tablespoons water
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chopped semisweet chocolate


  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by the spoonful onto an ungreased pan.
  3. Bake for 9 to 10 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.
They taste great, but if I have one complaint, it’d be that there is almost to much chocolate.  It tends to over power the peanut butter taste.  Next time I think I would cut the chocolate chips almost in half.   Maybe 1 cup, or perhaps 1 1/4 cup to let the peanut butter shine through again.  The best part of not being completely satisfied is that I feel a need to cook these again to perfect it.
