Bruschetta Chicken

Bruschetta Chicken was pretty quick and easy to make.   It also turned out to have a lot of flavor, I would definitely make it again.



  1. Cook the chicken thoroughly
  2. While the chicken is cooking dice the tomatoes, onion, basil, and parsley
  3. Mix the tomatoes, onion, basil, and parsley in a bowl.
  4. Pour a favorable amount of olive oil over the mixture to coat everything.
  5. Add a small amount of salt and pepper to your personal preference.
  6. After the chicken is cooked, add the bruschetta mixture to the top of the chicken.
  7. Pour Balsamic vinegar over the chicken and bruschetta to lightly coat everything.


Note:  You can add the balsamic vinegar to the bruschetta mixture prior to putting it on the chicken, however I find each person likes a different amount of vinegar so its best left to the individual.
