After making Bruschetta chicken the other day, my brother dropped off a bunch of Tomatoes from his garden.  So Stefanie and I decided to make Bruschetta again, and this time have it for dinner.

  1. Dice tomatoes
  2. Dice onion
  3. Dice herbs
  4. Mix into a bowl, and coat with olive oil.
  5. Salt and pepper the mixture to taste
  6. Spread the sliced bagette on a tray, and cover each peice with the bruchetta mixture.
  7. Lightly coat in Balsamic Vinegar if you choose to use it.
  8. Slice your cheese of choice thinly and put on top.
