Pulled Pork Breakfast Sandwich

A new take on breakfast sandwiches and a great use for leftover pulled pork. The inspiration for this sandwich came from having some homemade carnitas on Christmas Eve this year at my girlfriend's mother's house.  The carnitas are fried in "un cazo," which is a large copper pot. The cazo is placed over a fire pit and fried in lard for several hours until the outside is chewy-crispy and the inside is tender and falling apart.  The end result is not unlike the outcome of the pork shoulder we smoke, which sparked the idea for this breakfast sandwich.

Heat some fat trimmed from a pork shoulder or use bacon grease in a cast iron pan. Place leftover pulled pork and sliced onions in a cast iron pan over medium heat to fry for 7-10 minutes. Add some fresh ground black pepper and a small pinch of salt.

You want the pulled pork to get to that delectable state between chewy and crispy, similar to carnitas. The onions will have softened, then just start to crisp up a little on the edges by this point.

Now remove the mixture from the heat and set aside in a covered dish to keep warm. Grille some thinly sliced apples until just starting to soften, then remove and set aside. Fancy arrangement of the slices is optional.

Fry an egg to your liking, seasoning with fresh ground black pepper to taste. We prefer ours over medium, with just a little runny yolk.

While the egg is frying, lightly toast your roll. After toasting, spread a thin layer of marmalade or jam on one half. Orange or apricot work equally well here. Silbia found this interesting orange marmalade with whiskey at TJ Maxx.

Now assemble your sandwich, placing the shredded cheddar cheese on the bottom. Add the pulled pork/onion mixture and sliced apples.

Top with fried egg.

The grilled onion and slightly smokey pork mixture are wonderfully complemented by the light sweetness of the grilled apple and the marmalade. The saltiness sharpness of the cheddar cheese and the richness of the fried egg all come together to make a really tasty and unique breakfast sandwich. Enjoy!
