BBQ Pot Pie
So this is a recipe I've been thinking of doing for quite some time, and I never really got around to it. I've never really heard of a BBQ pot pie before, but the flavors seem to go so well together it just seemed like a no brainer to try out. So I did, and the results were fantastic. I will absolutely be making this again.
Ingredients:
- Pulled Pork - 1 pound (pre-cooked)
- Corn - 1/2 cup
- Bell Pepper - 1 Pepper Coarsely Chopped
- Onion - 1/2 a sweet onion
- Garlic - 2 cloves
- Cheddar Cheese - 1/2 cup
- BBQ Sauce - to taste
- Flour - 1/4 cup
Instructions:
- Pre-heat oven to 350 degrees
- Make the cornbread pie crust
- Spread it out in what ever dish you plan on baking it in.
- Put a layer of meat on the bottom.
- Add some BBQ sauce on top of the meat
- Add your corn, pepper, garlic, and onion.
- Add a layer of cheddar cheese
- Add BBQ sauce
- Add another layer of meat
- Add more cheddar cheese
- Add BBQ sauce
- Top it off with the cornbread pie crust, folding the edges over to connect it with the bottom.... add slits to the top for venting.
- Cook in oven for 45 minutes.
- When done, throw a little bit of cheddar cheese on top and broil it for about 2 minutes until cheese is bubbling.
- Let it sit and cool for 10 minutes.
